A Recipe for No Knead Bread!

      I checked online and found a recipe for the very one I made, by Jim Lahey! Here is the link: http://www.sullivanstreetbakery.com/recipes For some reason, the recipe here calls for more water than the one in the book. Use 1 1/3 cup, instead of 1 1/2 cup of water. Sometimes it pays to have the book! I really like this bread and enjoy making it as much as eating it! It doesn't keep as long as some of the other breads I make, but the leftovers can be turned into bread crumbs, croutons, bread pudding, or a delicious strata!

      I've been enjoying this beautiful, windy day from inside! I needed some more vinaigrette for my salads, so I made several, while I was at it. Once I get this posted, I'm on my way outside! It's 51 out there, but breezy! Hope your weather is pleasant this week!  Blessings from Bama!

I like my bread lighter in color, but you can cook it longer and it will get darker.
My salad with  roasted beets and homemade vinaigrette. The eggs are store bought and not as tasty as my home grown eggs. I added some roasted Hazelnuts after I took this shot. A nice piece of that bread, toasted would be good with this salad!


Vinaigrette on left has no Dijon mustard, but the one on the right does. I juiced some tangerines for this one. In the middle, freshly chopped green onions and cucumbers with some older vinaigrette.

I made this Red-Wine vinaigrette using my homemade red wine vinegar!

  1. I'm sitting here in Wisconsin - actually warm today a whole 10 degrees. This morning it was -15 here. I've been stuck home with no car, but enjoying it! I want to make more homemade breads, I will have to look at that link. Have fun in your 51 degree afternoon. Blessings from Ringle.

  4. Hi Bama Girl! Enjoy the warm weather for a couple of older, very cold seniors! We will get our sunshine through you! :) Your bread looks so much better and more inviting than the pictures on the book cover! Yours looks yummy! That salad looks delicious! Did you roast your own beet? Have they been in the freezer? How did that work? I would love that salad! As for your other recipes, I mentioned that Glen is dairy/meat-free, but I have become pretty good at substitutions...so...bring on the recipes! I will try them...they look wonderful!     1. Hello Cheeryshirley! I am definitely enjoying the weather, although today is cool and overcast. They predicted sleet and ice so schools were delayed for three hours. The bad weather missed us, but school was delayed anyway. We're not used to driving on snow or ice here in the South, so they take every precaution.
      Thanks, Shirley the bread is yummy! And the salad was delicious! I roasted the beets I purchased from Whole Foods. I haven't had enough of my own beets to freeze, but that is a thought. I'm not sure if beets freeze very well, however. I''m wondering if Hazelnut trees will grow in this part of the country. I will have to research that. I bought them at Trader Joe's.   5. These no knead breads are so fun and easy, aren't they? I find that in the winter, any bread that I made will rise better by the wood stove (I am in Colorado), but if I want a more developed (slightly sour-dough-ish) flavor, I just leave them in the kitchen where it's cooler. It's nice to warm the house and get the smell of fresh bread at the same time! :)

  6. The temp was the same here yesterday. I basically sat around and didn't do much. I actually have never minded kneading bread. I find it kind of relaxing :)

  7. Your bread and salad looks yummy! LOVE roasted beets too! Looks like you have your own custom salad dressings to choose from too..... how neat. I guess I cheat a little on kneading bread and either use my bread machine to make the dough, then hand-roll and shape or make it in my KitchenAid and let my paddle run for 10 minutes or so.... something like that. Love homemade bread here too! Our temps are supposed to be back in the 50's with high 60's (possible 70?) tomorrow. So strange. Blessings and hugs to you!

    1. There are so many techniques to making bread. I just found what works for me and go with that! Any way you make it, homemade bread just can't be beat! The weather has really been different this year! We might get snow in February or March? Blessings and hugs to you too!
